Spinach and Sun-dried Tomato Breakfast Wrap
Ingredients
2 eggs
2 Tbsp milk
1 flour tortilla
1 clove garlic, minced
1/2 cup chopped fresh spinach, or 1/4 frozen chopped spinach
1 Tbsp sun-dried tomatoes in oil
1.5 Tbsp feta, crumbled
Instructions
1. Scramble eggs with milk
2. Sauté garlic and sun-dried tomatoes in a frying pan the same size as your
tortilla over medium-low heat
3. After about 2-3 minutes add in spinach and cook until wilted (or until frozen
spinach is thawed and hot)
4. Pour scrambled eggs over the spinach and tomatoes gently so that
everything is evenly dispersed in the pan
5. DO NOT SCRAMBLE THE EGGS IN THE PAN
6. Place the tortilla over the raw egg mixture and let rest there
7. Wait until the tortilla starts to bubble (the eggs is cooked at this point)
8. Flip the tortilla over so that it is now laying egg side up in the pan
9. While the tortilla starts to become golden, crumble the feta over the top of
your eggs and let melt (about 2-3 minutes)
10. Fold the side of the tortilla in towards the centre to form your wrap
11. Cut in half and serve
