Fancy “Grilled” Cheese & Tomato Soup
Ingredients
- Butter
- Garlic
- Shallots
- Mozzarella cheese
- Ciabatta buns
- Pesto
- Tomato
- Pickles
- Spring mix greens
- Crushed tomatoes (Large can)
- Salt / Pepper / Italian seasoning
Directions
Soup
1. Cook garlic and shallots in a pot with butter.
2. Add a can of crushed tomatoes.
3. Add 1 1⁄2 - 2 cups of water (depending how soupy you want it).
4. Season to taste with salt, pepper and Italian seasoning.
5. Chop spring mix greens into small pieces. Add chopped greens a few minutes before
removing from heat.
“Grilled” Cheese
1. Preheat the oven to 400.
2. Spread pesto on both sides of the bun.
3. Cut slices of mozzarella and put it on the bun.
4. Place in the oven for about 10 minutes. (Watch it so it doesn't burn)
5. Add tomato slices, pickle slices and greens.
